Lemonade and Cupcakes!

So I got a lovely note from a lovely girl called Lyssa saying she really liked this blog, especially the recipes. It was really great to know that people out there do actually read thing little corner of the internet. So I have decided seeing as it’s a blistering hot summer, we could do with some more recipes from our little cookbook! Today we shall learn how to make refreshing lemonade and little rose petal cupcakes for an afternoon in the sun or for the perfect little picnic! Enjoy! (We sure do!)

Refreshing Lemonade

What you will need:

  • 1 cup of lemon juice (need about 4-6 fresh lemons)
  • 1 cup of water (for the syrup)
  • 1 cup of sugar
  • 3 to 4 cups cold water

What to do:

1. To make a syrup, heat the sugar and water in a small saucepan until the sugar is dissolved completely. Sugary goodness, yum!

2. Whilst your sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough to fill 1 cup of lovely lemon juice.

3. Add the juice along with the sugary water to a pitcher together. Add your 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate for 30 to 40 minutes to make it nice and chilled. Feel free to add ice!

4. Enjoy!

Rose Dream Cupcakes


What you will need:

  • 150g softened of unsalted butter
  • 150g caster sugar
  • 3 medium eggs
  • 150g self-raising flour
  • 1 tbsp rose water
  • 100ml milk
  • 1 packet instant royal icing
  • Rose petals or silver balls, to decorate

What to do:

1. Preheat your oven to 190C/gas 5. Line a 12-hole muffin tray with cupcake bases.

2. Using a wooden spoon, stir the butter and sugar together until pale and fluffy. Add the eggs, one by one, while stirring well between each addition. If the mixture starts to curdle, add a tablespoon of the flour to stabilise it.

3. Fold in the remaining flour, followed by the rose water. Next, start adding the milk – you may not need it all. What you want is a batter that will just fall off the spoon if you shake it a little.

4. Spoon the mixture into the muffin papers and bake in the oven until cooked through and golden, about 20 minutes. Turn out onto a rack to cool.

5. Make up a big batch of royal icing and spoon onto the cakes. Leave to set before decorating with rose petals or silver balls.

6. Enjoy with your lemonade!

Update!

I am deeply sorry for the lack of updates lately (for those of you who do read this!) Things have been so, so busy and I felt like my head hasn’t even been screwed on the right way round! Thankfully things are beginning to quieten down so I can think again and get this blog updated!

So what’s been happening? What hasn’t happened?! If I went into everything we would be here until 2015 and I really don’t want to do that to you.

Nathan and I celebrated his birthday with pizza and light up balloons. We partied and danced and just had the best of fun. He’s all grown up now but I’ll catch him up in a month’s time. Eep. It’s so funny to think we’ve known each other since we were 16 and now we’re 20. We really have grown up together and I couldn’t ask for more. His work has been hectic, but as always he has coped and blown the socks of it all.


I spent last week in Bournemouth which was beautiful. 30 degrees every day and we’re now looking at a drought this Summer. Haven’t had one since 2003 when they even cut people’s water supplies off. Scary, scary. It hit 32 degrees today and it’s only heading up from here. We’re going to see rain on Thursday! First time in 2 weeks. Sorry, no offence but I do get very sick of people always calling England the rainiest place on Earth because it obviously isn’t. And I am loving the heat! I met a fellow photographer Olivia Bell and we spent a morning on the beach shooting and getting very wet in the sea. It was heaps of fun all the same.

I have been so busy with shoots lately. I was recently published which opened many more doors for me. It’s all about getting your foot in the door which is never ever easy. I did my biggest shoot yet in a graveyard 2 weeks ago. It was very scary and we were all squealing – even the men! Below is a shot of the few of us who headed back to the same station.

I promise to get round to doing a sole photo post very soon with some shots of my new work. Right now it’s getting late and I am absolutely pooped and need to hit the hay. My poor fan is working over time so I guess I need to give it a break for now. [:

3 Years.

Celebrating together. <3

3 years ago I would never have imagined what a whirlwind of a journey life had in store for me. I never imagined that I would fall in love and spend my life with my special someone.

Nathan and I have spent 3 years together as of May 20th 2010. On May 20th 2007 we first proclaimed our love and have been inseparable since. I found my soulmate in everything he is and shall become, I couldn’t be luckier in any way. When you find someone you know you’ll grow old with, you gain a whole new understanding to how less scary life can be with someone you love. The chances that Nathan and I ever met are slim to none, but something made me make that move that day in order for Nathan to first find me. I’m not really the kind to believe in destiny, but I truly do believe that everything happens for a reason. And this was fate through and through. We’re young, we’re more in love than ever before and life is so new and exciting. Every day is a new adventure, whether I’m beating caterpillars off Nathan’s shirt or he’s tickling me until my face turns to beetroot. 3 years ago I never knew life would be so good.

I think there is one true soul for each one of us in this World. Sometimes it takes people 40 years to find them, and other people know them their whole lives. Whoever that person is, let them know. We will all find that special someone and I am blessed to have found mine at 16. I now know I can grow up and never be alone, even when I’m scared and cry at night, there is always an arm to hold me tight and to wipe away my woes.

Nathan, you are my World to me and I will forever love you. My heart grows everyday for you and our love and I shall cherish it forever and ever. You are my perfect prince, my angel and my “fuzzy lumpkin” and you always shall be. I am eternally proud to be by your side and shall always be right here for you too. You’re the best and I’ll always be here to remind you just how much you mean to one little heart. I love you my darling.

Bournemouth.

Here are some images I took a long time ago of a place we’ll be calling “home” very soon. A town of long twilight hours, rolling waves and endless gardens to explore with hot air balloon rides and squirrels which came to sit on Nathan’s lap. It’s a bustling town. These shots were my first visit to Bournemouth, we ran around as the sun disappeared on the horizon and I took photos of everything. I got so excited being able to see the Isle of Wight so close by where I spent a lot of my childhood holidays on that beloved island before it was ever famous for its music festival. May spend a few days visiting that island again seeing as we’ll be so close now. I will commute between London and Bournemouth for my photographic work and bring some models to the beach with me now I have that at my disposal! Life will be a happy blur of ice creams at midnight on the pier and roller blading down the promenade. I can’t wait.
