Lemonade and Cupcakes!

So I got a lovely note from a lovely girl called Lyssa saying she really liked this blog, especially the recipes. It was really great to know that people out there do actually read thing little corner of the internet. So I have decided seeing as it’s a blistering hot summer, we could do with some more recipes from our little cookbook! Today we shall learn how to make refreshing lemonade and little rose petal cupcakes for an afternoon in the sun or for the perfect little picnic! Enjoy! (We sure do!)

Refreshing Lemonade

What you will need:

  • 1 cup of lemon juice (need about 4-6 fresh lemons)
  • 1 cup of water (for the syrup)
  • 1 cup of sugar
  • 3 to 4 cups cold water

What to do:

1. To make a syrup, heat the sugar and water in a small saucepan until the sugar is dissolved completely. Sugary goodness, yum!

2. Whilst your sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough to fill 1 cup of lovely lemon juice.

3. Add the juice along with the sugary water to a pitcher together. Add your 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate for 30 to 40 minutes to make it nice and chilled. Feel free to add ice!

4. Enjoy!

Rose Dream Cupcakes


What you will need:

  • 150g softened of unsalted butter
  • 150g caster sugar
  • 3 medium eggs
  • 150g self-raising flour
  • 1 tbsp rose water
  • 100ml milk
  • 1 packet instant royal icing
  • Rose petals or silver balls, to decorate

What to do:

1. Preheat your oven to 190C/gas 5. Line a 12-hole muffin tray with cupcake bases.

2. Using a wooden spoon, stir the butter and sugar together until pale and fluffy. Add the eggs, one by one, while stirring well between each addition. If the mixture starts to curdle, add a tablespoon of the flour to stabilise it.

3. Fold in the remaining flour, followed by the rose water. Next, start adding the milk – you may not need it all. What you want is a batter that will just fall off the spoon if you shake it a little.

4. Spoon the mixture into the muffin papers and bake in the oven until cooked through and golden, about 20 minutes. Turn out onto a rack to cool.

5. Make up a big batch of royal icing and spoon onto the cakes. Leave to set before decorating with rose petals or silver balls.

6. Enjoy with your lemonade!

“The Eighth of The Eighth.”

Well, where to even begin?

This time last year, I was just turning in to bed to prepare to get up in a mere 4 hours time to go and get Nathan from Heathrow. Now he is laying beside me in bed after giving me what is definitely the best day of my entire life.

Everything was perfect. I couldn’t have asked for more. I will always remember this most fantastic day with the fondest of memories. I cannot believe how blessed I have been, it makes me all emotional to think about!

Nathan wrote the most beautiful blog entry last night which filled my eyes with tears. When he writes I’m always reminded that little bit more as to why I fell in love with him. He really does create magic with words. He then wrote the most amazing birthday card for me which I woke up to this morning. Once again, my eyes brimmed with tears as I was just so grateful to be here today with him. This is the first birthday I have ever shared with him, he made everything as special as it possibly could’ve been.

He gave me a surprise necklace. I had been pestering him about it ever since he bought it a week ago, and eventually all my curiousity paid off. I received the most stunning of all stunning necklaces. It was a blue topaz on a gold chain. Once again, I got all soppy on him and kept strangling poor Nay with hugs.

After opening some more little birthday goodies including a well-needed iPod Touch (now I can finally listen to my tunes on the go again!) and some lovely, pretty clothes, we ate toast with nutella.

We then had a lovely lunch that my Mum had been planning for days with lots of vegetarian dishes especially for us too; which were delicious! We ate way too much, we all felt sick afterwards, but still had room for cake. Oh that cake was like a little bite of Heaven. We moved into the garden for that as the Sun was shining and it was a good 30 degrees for the first time in a week. I felt so lucky to have nice weather!

We then chilled after lunch, just lazed about and cuddled on the sofa. I had suggested we go to one of my favourite places, it’s a little tearoom which sells anything you want (within reason!) We all had a cup of tea and I went for chocolate ice cream as well as more birthday cake. It was lovely to have everyone together and all cheery. We then went for a walk and the afternoon light was incredibly magical. There was a cool yellow tone to everything, the World looked so beautiful this afternoon. I wish I could’ve stayed to watch everything.

Nathan and I took this in front of a bunch of heather plants. We really like heather as we once made one another lay down in it when we first met. It was pretty funny, so it holds some pretty odd but fun memories for us!

And then we crashed, we were totally pooped out! Nathan looks like this right now curled up next to me, listening to his iPod as he sleeps. He’s so cute, I want to stroke his face but I know I’ll wake him. It is 1am and I should be going to sleep too.

Hai there!

Nathan and I are both feeling absolutely shattered today. Yesterday was busy, busy, busy and it feels like we’ve hardly slept a wink either. But neither of us are complaining, we’re just having a quiet day and may go to the fun fair this afternoon. But we may go on the weekend, depending on how we’re feeling.

The windscreen wiper snapped off our car yesterday which is a pain in the arse. We have to park underneath a tree every night and it deposits sticky stuff all over the place; the majority being on our car. It doesn’t aim for any other car parked underneath it, oh no, it aims specifically for our’s as I’m convinced it is out to get us. That evil tree. Anyway, yesterday morning I was washing the windscreen and one of the wipers started to make a horrible noise, so I turned it off and it went flying! I kept having to remind myself that it was snapped and I mustn’t turn it on. But then we were waiting for a car to turn across us and I managed to stall as we were on a slope, and as I turned the ignition back on, I bumped the wipers on so we had this metal thing scrape right across the glass making a nail-down-chalkboard noise. It was most unpleasant. So this weekend I think we need to drive off to Halfords and get it fixed. I may pick up some other bits and bobs whilst we’re there. I’d love to invest in a Tomtom sometime. But even those are scary as people always submit stories of how they got led to cliff edges because of those navigation systems. What’s with that? That’s not cool!

Oh yeah! Nathan said he’d buy me a Tiffany’s ring for our wedding so we spent lunch time on their site. I’m positive I found my perfect one. [: I’m so excited and happy and eeeeh!

I’ve decided what to do for Nathan’s birthday and I am thoroughly stoked. I think it is a very good plan and I can’t wait to do it all. Unfortunately for him, he’s going to have to put up with my secretive self and gleeful giggles for just over a week now. I just need to buy him presents. I wanted to get him a macbook, but they seem to be a tad out of my budget right now, so I guess I’ll downsize and find something just as good. Hmm.

We also found the most amazing place the other day. We were walking through all these trees and came out onto a massive lake/pond. I really want to get in sometime and take a million photographs, but it is protected because of wildlife until July 31st. So come August 1st, I’ll be waiting in the bushes for everyone to vanish before I strike! I want to try and do a water series and make it look all misty and cold, that means Nathan will be getting wet again. But I will be too, so we’ll just have heaps of fun!

Anyway, this was just a blog to update on our busy lives right now. I think we’ll go for an afternoon snooze later. So tired! That is all for now! Over and out.

Prudence & Moccasin.

A little while back we met my Godmother’s new puppy called Prudence. Yesterday we got the honour to go and photograph her and her little puppy friend called Moccasin the golden dachshund. We drove down to Dorking and thankfully the rain managed to hold off for us for the 2 hours we spent with them. They were so, so sweet… and very energetic! I’ve never photographed anything like puppies before but it was heaps of fun and kept us really fit!

I now have a party event booked for July which I’m thoroughly looking forward to! Looks like things are beginning to lift off for me (or so I hope at least!)

I really have not much more to report on. Nathan is bogged down with work but is making amazing progress every day. His immense concentration is enough to cause an earthquake. Speaking of which, yesterday morning South London saw the most incredible storm. Turns out it blew over to Suffolk and developed into this! It made the ground shake and woke up several towns at 6am. Everyone was talking about it all day long. So much for sleep-in’s, ey!?

Bicycle Love

Today was a beautiful day. It was magical from the second we woke up. We had a barbeque at my parent’s. Yes, English people do have barbeques too! We stuffed ourselves full with everything and then could do nothing but sit for a couple of hours as we felt fit to burst. How I love and hate that feeling.

Today we also found out that Connie has been rehomed. We can finally have some closure on her now. I’m so happy and I hope her new owners have the best time with her. Thank you Battersea for keeping her name and for also keeping her collar. Here she is. [:

I also added 300 words to my Uni essay. It is coming together all rather nicely. I’ll finish it off tomorrow as I have very little to go and can get it done within the morning.

Tomorrow is our 23 month anniversary. I’m super excited. It feels like we’ve been together for even longer than that, everyday has been so special because we’ve learned that everyday had to be special. We used to yearn for the day that we could live together. We waited for what seemed a lifetime. We were apart for 6 months before I arrived in Sydney. We spent 2 months together out ther before I got on a plane back to the UK. So Nathan chased me on a plane the next day. I’ve never had anyone chase after me to the other side of the World. I cried all the way back between sleeping for 20 hours. I stumbled around Bangkok with no credit to contact anyone I knew, I was totally alone in a strange country just wanting to hear Nathan’s voice. I landed in the UK and turned on my phone to receive a call straight away from him to tell me that he had booked a flight to come out to live with me. It was the best day of my life.

Since then we’ve been settling into life in the UK in all its glory (hah!) We’ll return to Australia really soon and I’m really looking forward to a change of scenery. In so many ways, the UK and Australia are so similar, but they are just so different too. I’d say they were different in more ways than they are similar. But I like different.
